Portabella Quesadillas

Ingredients:
  • Flour tortillas
  • 2% reduced fat Mexican cheese blend, shredded
  • Portabella mushrooms, sliced
  • Green onions
  • Roasted red peppers
Garnish Ingredients:
  • Salsa
  • Nonfat Greek-style yogurt
Preparation:
  1. Spray a Panini press or tabletop grill machine with a non-stick spray.
  2. Lay down one tortilla and layer with any combination of the above items.
  3. Top with another tortilla and close the press.
  4. Cook until heated through and cheese is melted.
  5. Cut into sections with a pizza cutter and top with salsa and/or yogurt.
